DIY Plum vinegar recipe【Quinoa & Sorghum Vinegar 】

【Ingredients】
1 bottle of Quinoa & Sorghum Vinegar
600g plums
600g rock sugars(slightly adjust the amount according to your preference)
*above ingredients are measured for 2L glass jar*

【Steps】
1. Clean throughly the glass jar with hot water and put aside to dry it.
2. Remove the plum stalk and clean it, dry them in a dark area.
(Tips: the plums need to be completely dry without any water)
3. Put the plums and rock sugars inside the jar in order.
4. Pour over the Quinoa & Sorghum Vinegar until it cover all the plums. Set the jar in a dark, dry area and let it ferment for 3~6 months.

【Tips】
The whole process need to be completely dry without any water.
The longer it ferments, the richer it tastes.

DIY Apple vinegar recipe【Quinoa & Sorghum Vinegar 】

【Ingredients】
1 bottle of Quinoa & Sorghum Vinegar
600g Apples
600g rock sugars(slightly adjust the amount according to your preference)
*above ingredients are measured for 2L glass jar*

【Steps】
1. Clean throughly the glass jar with hot water and put aside to dry it.
2. Wash the apples and dry them out, take out the pit and cut into big slices.
*Peeling is optional. We suggest that the organic apples are better if you keep the skin, avoiding  the pesticide residues.
3. Layer the rock sugars with slices of apple inside the jar.
4. Pour over the Quinoa & Sorghum Vinegar until it cover all the apple slices. Set the jar in a dark, dry area and let it ferment for 3~6 months.

DIY Pineapple vinegar recipe【Quinoa & Sorghum Vinegar 】

【Ingredients】
1 bottle of Quinoa & Sorghum Vinegar
600g Pineapples
600g rock sugars(slightly adjust the amount according to your preference)
*above ingredients are measured for 2L glass jar*

【Steps】
1. Clean throughly the glass jar with hot water and put aside to dry it.
2. Cut the pineapples into chunks  and be careful not to allow any water on the knife and the cutting board.
3.  *Tip*  Rinse the chunks with some vinegar so the finish product can be highly successful.
4. Put the chunks and rock sugars inside the jar in order.
5. Pour over the Quinoa & Sorghum Vinegar until it cover all the chunks. Set the jar in a dark, dry area and let it ferment over 3 months.
*The vinegar which used on step 3 can't be poured into the jar. 

【Tips】
Pineapples contain numerous water so there is a high percentage of failure. But using our Quinoa & Sorghum Vinegar ,which has 5.8% acidity, the failure will blance out .

Iced sweet & sour tomato recipe【Quinoa & Sorghum Vinegar】

【Ingredients】
1 Spoon of Quinoa & Sorghum Vinegar
Some cherry tomatos
Some salted plums
2 Spoons of sugar
200ml of waters

 

【Steps】
1. Wash the tomatos and remove the plum stalk. Using knife to draw a cross on the top of the tomatos.
2. Boil the tomatos for about 1 minute.
3. Take them out and cool them down in the iced water, so the skin will come out easily.
*Use toothpick to do it.
4. {Making sauce}
Mix well all the ingredients in a bowl
(Adjust the ingredients based on your preference and the size of the container)
5. Put the sauce with the tomatos in the container(The sauce need to cover all the tomatos), then add some salted plums. Take them into the fridger until next day, then they are good to eat.

Korean pickled radish recipe【Quinoa & Sorghum Vinegar】

【Ingredients】
3 Spoon of Quinoa & Sorghum Vinegar
Some radishes
2 Spoons of sugar
1 Spoon of salt
200ml of waters

【Steps】
1. Cut the radish into cubes
2. {Making sauce}
Cook sugars and salts with boil water until they melt, adds the vinegar and stirring them together.
(Adjust the ingredients based on your preference and the size of the container)
3. Put the sauce and radish in the container
4. Take it to the fridge for 1 day after it is cool down.
(p.s. If you want to reduce the smell of radish, sprinkle few salts on the radish and set aside for 30 minutes, then wash away the salts with water.)

Passion fruit with lotus root recipe【Quinoa & Sorghum Vinegar】

【Ingredients】
1 Spoon of Quinoa & Sorghum Vinegar
Some lotus roots
Some passion fruits
1 Spoon of sugar

【Steps】
1. Wash and peel the lotus roots, cut them into slices.
2. Boil the lotus roots for about 2 minutes.
3. Put them into cold water to keep it fresh and become crispy.

Mix passion fruits, vinegar and sugar together.

Japanese onion salad recipe【Quinoa & Sorghum Vinegar】

【Ingredients】
2 Spoons of Quinoa & Sorghum Vinegar
1 Onion
2 Spoons of sesame oil
4 Spoons of soy sauce(bonito soy sauce will be a better choice)
Few ice
White sesame/bonito flakes(optional)

【Steps】
1. Peel the onion and cut it in half, soak it in the ice water for 10 minutes.(To avoid the tears onion caused to your eyes)
2. Cut them into slices then put into ice water for another 30 minutes to reduce onion's spiciness. (optional)
3. {Making sauce}
Mix the vinegar, sesame oil, bonito soy sauce together.

4. Drain the onion slices and mix well with the sauce, fridge them for about 1 hour.

Kohlrabi salad recipe【Quinoa & Sorghum Vinegar】

【Ingredients】
2 Spoons of Quinoa & Sorghum Vinegar
Half of Kohlrabi
2 Spoons of soy sauce
1 Spoon of sugars
Half spoon of sesame oil
2 Spoons of salt
Some garlics
1~2 red peppers
Few coriander(optional)

【Steps】
1. Wash and cut the kohlrabi into slices
2. Add 2 spoons of salts and use your hand to mix the salt thoroughly with kohlrabi. Set aside for 15~30 minutes until it becomes soft and sweating.
3. {Making sauce}
Mix well the vinegar, soy sauce, sugars, sesame oil.
4. Chop the garlics, red peppers and coriander.
5. Drain the kohlrabi and rinse it with cold water.
6. Put all the above ingredients together and mix well, set aside for half an hour.

Sweet and sour black beans recipe【Quinoa & Sorghum Vinegar】

【Ingredients】
300ml of Quinoa & Sorghum Vinegar
Some black beans
300ml of honey
*Must use glass containers*

【Steps】
1. Wash and drain the black beans.
2.  Cook the beans in the pan with medium and dry heat until their skin start to crack, then turn to low heat and cooking for 5-10 more minutes until you start to smell the beans.
3. {Making sauce}
Mix well the vinegar and the honey
4. Put the black beans inside the jar and pour in the sauce until it cover all the beans. Set aside in a dark area for 3-4 days, it will be ready to serve after the beans absorb the vinegar and expand a little bit.
